Raclette is a semi-firm cow’s milk cheese. It has a robust smell, similar to sweaty butt. Flavor of the cheese is distinct as well – it is almost similar to dehydrated banana chips. My source tells me that the cheese is used in dishes where it is melted over vegetables (small potatoes, gherkins, pickled onions, and dried meat).
