Cow’s milk cheese that is a combination of a French sof-ripened triple cream cheese and Italian Gorgonzola. Milder than Gorgonzola because it is cut with the triple cream cheese. It is very much like a blue brie. It has a nutty taste, smooth with complex flavors. Needs to had with red wine.
