Lit recipe. Serve on fresh corn tortillas with a bit of sour cream, shredded cabbage, fresh cilantro, avocado, and a spritz of lime.

Instructions
  1. Salt and pepper pork and sear on each side. Move to crockpot.
  2. Juice orange and lime over meat. Add Rotel, onion, garlic, cinnamon stick, oregano, cumin, coriander, chipotle, and cola. Set crock to low or around 200°F and cook for 6 hours.
  3. Remove bone and shred pork with a fork. Serve on tortillas.
Recipe Notes

Try adding some Mole. The Chipotle in adobo can add quite a bit of heat; which is great, but might make it too spicy for some. Also, regarding fresh tortillas: go easy on the water, just enough to make the dough stick - also add a dash of salt to the dough - do not press too hard - light touch - be patient - the first 1-2 are usually screw ups.
