Instructions
- Add fat back to stock pot and cook on low for about 10 minutes. Make sure to move it around so it doesn't stick. Chopped onions and peel potatoes while you wait.
- Add onion and sweat. Make sure they don't brown. Dice potatoes while you cook and add to pot when finished.
- Add a minimal amount of water to just barely cover potatoes and onions. Cook until potatoes are done. About 30 minutes.
- Add haddock in layer fashion and butter and cook for about 20 minutes.
- Add half & half. Done.
