Ingredients
Meatloaf
- 1 lb Ground Beef
- 1 lb Ground Pork
- 1/4 cp Salami Cubed
- 1/2 cp Ham Cubed
- 1/2 med Onion Minced
- 1 lg Carrot Diced
- 1 med Red Pepper Diced
- 1/4 cp Thyme Fresh, chopped
- 1/4 cp Parsley Fresh, chopped
- 2 lg Eggs Beaten
- 2 clove Garlic Minced
- 1/2 cp Breadcrumbs
- 1 tbsp Worcestershire Sauce
- 1/4 cp Buttermilk
- 1 lb Bacon
Glaze
- 1/2 cp Ketchup
- 2 tbsp Brown Sugar
- 2 tsp Worcestershire Sauce
- 1 tbsp Balsamic Vinegar sweeter the better
- 1 dash Lousiana Hot Sauce

Instructions
- Saute onions in a pan with olive oil and let cool to room temp while preparing the rest of the recipe.
- Preheat oven to 400F.
- In a glass bowl, mix ground beef, ground pork, ham, salami, carrots, thyme, parsley, eggs, garlic, breadcrumbs, worcestershire sauce, cooled onions, buttermilk, and salt and pepper.
- Line a bread pan with stripes of bacon slightly overlapping. Place bacon on the ends to pan so it can fold over and cover the entire loaf. Fill bacon lined pan with meat mixture and fold over bacon to cover entire loaf. Flip over onto baking dish and slowly remove bread pan.
- Cover loaf with glaze and bake for approximately 60 minutes and check temp. Goal is 145F-150F, so it might take 75 minutes.
