Ingredients
- 20 oz Tortellini fresh
- 1 cp Corn
- 15 oz Black Beans
- 1 med Bell Pepper diced
- 1 med Avocado diced
- 1 1/2 cp Tomato cherry, diced
- 1/4 cp Red Onion diced
- 1/4 cp Cilantro fresh, chopped
Dressing
- 3 tbsp Olive Oil
- 2 med Lime juiced
- 1 clove Garlic minced
- 1 tsp White Sugar
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 dash Salt to taste
- 1 dash Pepper to taste
Servings: people
Instructions
- Prep everything except the pasta.
- Cook tortellini per instructions. Drain.
- Combined everything dressing, pasta, and ingredients in a large mixing bowl and toss.
Recipe Notes
Add some small mozzarella balls for some added protein.
