  1. Poach eggs.
  2. Make hollandaise sauce while eggs cook.
  3. Toast english muffins
  4. Melt butter in saucepan and add mushrooms until butter is absorbed
  5. Add tomato and spinach at the last minute.
  6. Spoon hollandaise over toasted english muffins and place mushrooms, tomato, and spinach next. Place poached egg opn each and spoon more sauce over eggs.
