Ingredients
- 3 English Muffins
- 6 Eggs
- 8 oz Spinach
- 1 Tomato chopped
- 8 oz Shiitake Mushrooms chopped
- 2 tbsp Butter
- 4 cp Hollandaise Sauce

Instructions
- Poach eggs.
- Make hollandaise sauce while eggs cook.
- Toast english muffins
- Melt butter in saucepan and add mushrooms until butter is absorbed
- Add tomato and spinach at the last minute.
- Spoon hollandaise over toasted english muffins and place mushrooms, tomato, and spinach next. Place poached egg opn each and spoon more sauce over eggs.
