Instructions
  1. Sourdough Starter: In a large bowl, combine, water, instant yeast, and sugar. Let sit until foamy, about 5 minutes (if it does not foam, throw mixture away).
  2. Add the all purpose flour and stir vigorously to work air into mixture. Cover with a towel and let rest in a oven with its light on for 8-12 hours. Use immediately.
  3. Sourdough Bread: In an electric mixer with a dough hook, combine bread flour, sourdough starter, and salt and knead until it no longer sticks to the sides or bottom of mixing bowl. Place in a lightly oiled bowl and cover and let rise for 1 to 2 hours until it doubles in size. Turn out onto a light floured surface. Sprinkle with flour and knead gently, removing large air bubbles.
  4. Shape into a circle, then fold into a ball, pinching the seams and placing seam side down on parchment paper. Cover with a kitchen towel and let rise for about an hour.
  5. Preheat oven and pizza stone to 400°F. Place a shallow pan on the bottom rack and pizza stone on the rack above. Have 1 cup water ready.
  6. With a sharp knife, cut an "X" into the top of the dough.
  7. Place bread with parchment paper on the stone and add water to shallow pan. Close oven door quickly and let bake for about 60 minutes or golden brown.
