  1. Salt and pepper beef to taste and brown in a large saucepan over medium high heat. Add onions, garlic, coriander, cumin, and oregano. Sweat onions for a couple of minutes.
  2. Add beef stock and rotel simmer on low for about 2 hours until beef is tender.
