  1. In a large skillet, saute onion in 1 tbsp butter until soft.
  2. Add spices and garlic, and saute for one minute.
  3. Add parsnip, celery, and water to cover. Simmer over medium heat until tender, about 30 minutes. Drain and reserve.
  4. Mash and add liquid to desired consistency. Stir in remaining butter
