Add butter, cream, garlic, nutmeg, and pepper to a medium saucepan and simmer.
Cook pasta and sauté shrimp in pan with garlic and shallot.
Once cream sauce is gently simmering, slowly add cheese. Make sure it is grated. Grated cuts into the curds – swiss is off book with alfredo, so you want to make sure you minimize curds.
Half way through adding cheese, add sherry and continue the melt.
Drain pasta, plate, add shrimp, and spoon alfredo over dish. Boom!
