Light, healthy salad to accompany a Mexican dish. For added flavor, add crumbled feta or Mexican cheese.

  1. Dice onion and toss with lime and red wine vinegar and a dash of salt to macerate for 15-20 minutes.
  2. Add garbanzo beans, tomato, avocado, and cilantro and toss.
  3. After onions have macerated, add olive oil, adobo, dry mustard. Add to veggies and toss.
