Instructions
Melt
butter
in a heavy saucepan over medium-low heat until foam subsides, then whisk in
flour
and cook, whisking, for 1 minute.
Whisk in
milk
,
mustard
, and
pepper
and bring to a boil over medium heat, whisking, simmer, whisking, for 2 minutes.
Add
beer
and simmer, whisking, for 1 minute.
Remove from heat and whisk in
cheese
until melted.
Toast
bread
in broiler on a baking sheet 5 inches from heat, turning once, 5 minutes total.
