Quarter cabbage and thinly slice. Discard core. Add to a colander and add salt while tossing. Place in sink and let sit for 2-3 hours.
Add vinegar, wine, bay leaves, sugar, peppercorns, and mace to a saucepan and simmer until reduced by half. Remove from heat and let sit while cabbage sweats.
Rinse cabbage with cold water and place in non-reactive bowl. Strain vinegar mixture into bowl.
