  1. Pound pork between plastic wrap. Set up 3 stations: 1.) Mix flour, salt, and pepper. 2.) Beat egg. 3.) Mix breadcrumbs and oregano. Dredge in flour, then, egg, then bread crumbs.
  2. Add canola oil to medium high heat. Fry cutlets for 2 minutes on each side and set aside.
  3. Preheat over to 350 degrees. Spread thin amount of tomato sauce in a 9x13 inch pan. Place fried cutlets in and cover with remaining sauce. (it's a good idea to set aside about a 1/2 cup as the sauce will evaporate. Top with mozzarella and parmesan and place in over for 25 minutes.
  4. Cook pasta as directed.
