Lit recipe. Serve on fresh corn tortillas with a bit of sour cream, shredded cabbage, fresh cilantro, avocado, and a spritz of lime.

- 1/2 head Cabbage
- 1 med Avocado
- 1/2 cp Sour Cream
- 5 sprigs Cilantro
- 10 oz Queso Fresco

Instructions
- Salt and pepper pork and sear on each side. Move to crockpot.
- Juice orange and lime over meat. Add Rotel, onion, garlic, cinnamon stick, oregano, cumin, coriander, chipotle, and cola. Set crock to low or around 200°F and cook for 6 hours.
- Remove bone and shred pork with a fork. Serve on tortillas.
Recipe Notes
Try adding some Mole. The Chipotle in adobo can add quite a bit of heat; which is great, but might make it too spicy for some. Also, regarding fresh tortillas: go easy on the water, just enough to make the dough stick - also add a dash of salt to the dough - do not press too hard - light touch - be patient - the first 1-2 are usually screw ups.
