  1. Heat peanut oil in a large pot over medium heat. Add butter and melt. Sweat onions.
  2. Add curry and cinnamon cooking for 2 minutes. Add rice and stir well. Add stock and bring to boil. Reduce heat and simmer for 25 minutes until rice is tender.
  3. Set aside for 5 minutes. Mix in cashews,herbs, and scallions.
