  1. Preheat oven to 450°F. Peel away a couple of layers of garlic bulbs skin, keeping cloves intact. Slice about 1/4″ off the top of the bulb, exposing cloves. Place in aluminum foil and drizzle with olive oil and cover with foil. Place in oven and bake for 45 minutes. Let cool and set aside.
  2. Add instant yeast to mixer and add warm water and mix gently with wooden spoon. Add bread flour, kosher salt, garlic, and rosemary. Start mixing with wooden spoon and fully wet the mixture. Cover dough and set in a warm place to rise for 3 hours then place in refrigerator over night.
  3. When ready to bake, place rack with a baking pan filled with water on the lowest shelf, and a rack with a bread stone on the shelf above. Preheat oven to 450°F.
  4. Sprinkle dough with flour. Divide the dough into two even loaves, shaping into a ball. Place on parchment paper and sprinkle with flour. Let rest for 30 minutes. Score top with “X” and bake for 30 minutes.
