Ingredients
- 7 lg Eggs divided
- 1 lb Breakfast Sausage Mailhots is the best
- 1/4 cp Green Onions minced
- 1/8 cp Dijon Mustard
- 2 clove Garlic minced
- 2 cp Flour all purpose
- 2 cp Breadcrumbs panko and regular
- 1 tsp Salt to taste
- 1 tsp Ground Black Pepper to taste
- 1 cp Crisco
- 1 cp Canola Oil
Servings: eggs
Instructions
- Bring 6 eggs to room temp while water comes to a rolling boil. Add eggs. Boil for 6 minutes, then immediately remove to an ice bath.
- Mix sausage, onions, garlic, mustard, salt, and pepper. Form 6 thin patties to wrap around the eggs.
- Bring crisco and oil to 325°F and preheat oven to 400°F.
- Set up 3 medium bowls for flour, breadcrumbs, and egg wash. Peel eggs, dredge in flour, and wrap in sausage patties. Take sausaged eggs and flour some more. Dredge in egg wash, then breadcrumb.
- Fry sausaged eggs in oil for 3 minutes on each side. Then bake in oven for 5 minutes.
