Ingredients
- 20 med Serrano Chilis
- 5 clove Garlic minced
- 3/4 cp Onion thinly sliced
- 1 tsp Vegetable Oil
- 2 cp Water
- 1 cp White Vinegar

Instructions
- Wash, stem, slice serranos and combine with garlic, onions, salt, and oil. Saute over high heat for a sweat.
- Add water and cook for 20 minutes. Stir occasionally. Try to evaporate most of the water.
- Allow to cool to room temperature then add to food processor and puree until smooth. Add vinegar as it purees. Add salt if necessary.
- Strain mixture through sieve.
