Ingredients
- 2 tbsp Butter unsalted
- 2 tbsp Flour all purpose
- 3/4 cup Milk whole
- 2 tsp Dry Mustard
- 3/4 cup Beer
- 6 oz Gruyere coarsely grated
- 4 slice Bread harvest
- 1/4 tsp Ground Black Pepper

Instructions
- Melt butter in a heavy saucepan over medium-low heat until foam subsides, then whisk in flour and cook, whisking, for 1 minute.
- Whisk in milk, mustard, and pepper and bring to a boil over medium heat, whisking, simmer, whisking, for 2 minutes.
- Add beer and simmer, whisking, for 1 minute.
- Remove from heat and whisk in cheese until melted.
- Toast bread in broiler on a baking sheet 5 inches from heat, turning once, 5 minutes total.
