Ingredients
- 3 lb Beef Round Roast
- 4 tbsp Olive Oil
- 1 dash Salt
- 1 dash Ground Black Pepper
- 1/2 cp Red Wine
- 3 med Potatoes Coarsely chopped
- 3 lg Carrot Coarsely chopped
- 1 lg Onion Quartered
- 6 clove Garlic Crushed
- 2 Bay Leaves
- 1/8 cp Onion Soup Mix
- 1 1/2 cp Moxie (12 oz can)
- 2 1/2 cp Water
Servings: people
Instructions
- Season Round Roast with salt and pepper. Add a 1/4 tbsp of Olive Oil to medium-high pan and brown on each side for 4 minutes. Deglaze pan with Red Wine.
- Peel and chop Potatoes, Carrot, and Onion. Add to bottom of crock pot with Garlic and Bay Leaves.
- Place Round Roast on top of veggies. Pour Onion Soup Mix on top of everything. Pour in Moxie, Water and pan drippings with the Wine.
- Set crock-pot to 200°F (low) and cook for 8 hours.
