Ingredients
- 2 lb White Beans they will double in size when soaked
- 1 1/2 lb Ham Hocks this ends up being 2
- 1 lg Onion
- 4 cp Water
- 2/3 cp Brown Sugar packed
- 2 tbsp Dry Mustard
- 1/2 tsp Clove
- 1/4 tsp Ground Black Pepper
- 2/3 cp Molasses

Instructions
- Rinse and soak white beans overnight in a large bowl with 10 cups of water. You'll need a large bowl. The following morning, drain and rinse white beans.
- Peel onion, but leave whole, cutting only the top off and notching, place in crock with ham hocks.
- Add white beans.
- In a separate bowl, mix brown sugar, mustard, pepper, and clove in warm water. Add to crock. Bake for 8 hours at 200-250°F - temp is important. A slow simmer is ok.
- In the last hour or so, add the molasses. When done discard the onion and remove the meat from the hocks and add back to the beans... mmmm.
