Ingredients
- 1 tbsp Olive Oil
- 1 lg Onion chopped
- 2 clove Garlic minced
- 1 lb Parsnip peeled & chopped
- 1 med Celery Root chopped
- 3 cp Water
- 2 tbsp Butter divided
- 1 Bay Leaves optional
- 1 tsp Thyme optional
- 1 tsp Caraway Seeds optional
Servings: people
Instructions
- In a large skillet, saute onion in 1 tbsp butter until soft.
- Add spices and garlic, and saute for one minute.
- Add parsnip, celery, and water to cover. Simmer over medium heat until tender, about 30 minutes. Drain and reserve.
- Mash and add liquid to desired consistency. Stir in remaining butter
