Ingredients
- 16 oz Garbanzo Beans drained and rinse
- 1 cp Tomato cherry, diced
- 1 Avocado diced
- 1/4 cp Cilantro fresh, chopped
- 1/4 cp Red Onion diced, macerated
- 1 tbsp Red Wine Vinegar
- 2 tbsp Lime whole lime juiced
- 1/4 cp Olive Oil
- 1 tsp Adobo
- 1 dash Dry Mustard
Servings: people
Instructions
- Dice onion and toss with lime and red wine vinegar and a dash of salt to macerate for 15-20 minutes.
- Add garbanzo beans, tomato, avocado, and cilantro and toss.
- After onions have macerated, add olive oil, adobo, dry mustard. Add to veggies and toss.
