Ingredients
- 1 head Red Cabbage
- 4 tbsp Salt sea
- 2 cp Apple Cider Vinegar
- 1 cp Red Wine
- 1 cp White Sugar
- 2 tsp Green Peppercorns
- 5 Bay Leaves
- 1 dash Mace

Instructions
- Quarter cabbage and thinly slice. Discard core. Add to a colander and add salt while tossing. Place in sink and let sit for 2-3 hours.
- Add vinegar, wine, bay leaves, sugar, peppercorns, and mace to a saucepan and simmer until reduced by half. Remove from heat and let sit while cabbage sweats.
- Rinse cabbage with cold water and place in non-reactive bowl. Strain vinegar mixture into bowl.
