Ingredients
- 3 tbsp Peanut Oil
- 1 tsp Butter
- 1 lg Onion sliced or diced
- 2 tsp Curry Powder
- 1/2 tsp Ground Cinnamon
- 1 1/2 cp Rice Basmati
- 3 cp Chicken Stock
- 1 cp Cashews roasted
- 1/3 cp Cilantro fresh
- 1/4 cp Dill fresh
- 1 bnch Scallions chopped
Servings: people
Instructions
- Heat peanut oil in a large pot over medium heat. Add butter and melt. Sweat onions.
- Add curry and cinnamon cooking for 2 minutes. Add rice and stir well. Add stock and bring to boil. Reduce heat and simmer for 25 minutes until rice is tender.
- Set aside for 5 minutes. Mix in cashews,herbs, and scallions.
